Ingredients
Scale
5 medium sweet potatoes
1 tablespoon olive oil
1 ¾ teaspoons salt divided
3 cups shredded cooked chicken
1 cup barbecue sauce
1 tablespoon honey
½ teaspoon chili powder
Quick-pickled red onions
Mexican street corn salad
Fresh cilantro finely chopped
Instructions
Heat the oven to 425°F and pierce the sweet potatoes all over with a fork. Coat each potato with olive oil and sprinkle with a bit of salt.
Place the potatoes on a lined baking sheet spaced apart, cover with foil, and bake for 45 to 60 minutes. Remove the foil during the last 10 to 15 minutes to crisp the skins.
Warm a skillet over medium heat and add the shredded chicken, barbecue sauce, honey, chili powder, and remaining salt. Stir and cook for about 4 to 5 minutes until heated through.
Serve the sweet potatoes topped with the BBQ chicken and optional toppings like Mexican street corn salad, quick-pickled red onions, and chopped cilantro.
Notes
Pull the foil off the sweet potatoes during the final 10 to 15 minutes of baking to dry and crisp the skins
Choose sweet potatoes of similar size for even cooking
Keep potatoes and chicken stored separately in the fridge to avoid watery textures
Reheat potatoes at 350°F before adding chicken
Freeze wrapped sweet potatoes up to 3 months and thaw fully before reheating though skins won’t be crisp after freezing
Use microwave, air fryer, or Instant Pot as alternate cooking methods
