These blueberry biscuits are easy to make, fluffy, and packed with fresh blueberries. Perfect for a delightful breakfast or snack, finished with a sweet lemon glaze.

  • 4 teaspoons baking powder
  • 1 cup cold milk
  • 1/3 cup sugar
  • 5 tablespoons cold or frozen butter
  • 1 teaspoon salt
  • 3 ounces fresh or dried blueberries
  • 1 cup powdered sugar
  • 1/8 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, combine flour, baking powder, sugar, and salt.
  3. Cut in butter until mixture resembles coarse crumbs.
  4. Stir in milk and fold in blueberries gently.
  5. Turn dough onto a floured surface and knead lightly.
  6. Roll or pat dough to 1 inch thick and cut into rounds.
  7. Place biscuits onto a baking sheet and bake for 12-15 minutes or until golden.
  8. Meanwhile, whisk powdered sugar, water, vanilla, and lemon juice to make glaze.
  9. Drizzle glaze over warm biscuits before serving.
