  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon celery seed
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • 4 boneless skinless chicken breasts
  • 1 pound medium shrimp peeled and deveined
  • 2 tablespoons extra virgin olive oil divided use
  • 1 tablespoon minced garlic
  • ½ cup unsalted butter divided use
  • ¼ cup chicken bone broth
  • 1 cup baby bella mushrooms sliced
  • 1 white onion sliced
  • 1 teaspoon dried parsley
  • ¼ cup fresh parsley

Instructions

  1. Mix all cajun seasoning spices in a bowl then split the mixture in half.
  2. Rub one half of the seasoning onto both sides of the chicken breasts thoroughly.
  3. Toss the shrimp with the remaining seasoning and one tablespoon of olive oil in a separate bowl.
  4. Warm a large pan over medium heat and melt two tablespoons of butter before adding mushrooms and onions.
  5. Cook the vegetables until tender, stirring frequently for about 10 minutes.
  6. Use a splash of olive oil to coat a cast iron skillet over low heat and transfer the cooked veggies into it to keep warm.
  7. Heat the large pan to high, add some olive oil, then cook the chicken 4 to 5 minutes per side until it reaches 165°F internal temperature.
  8. Remove chicken and place it over the veggies in the skillet.
  9. Add one tablespoon of butter to the pan and sear shrimp one minute each side, then add them to the skillet next to the chicken.
  10. Lower pan to medium heat, sauté garlic for one minute, then pour in broth to deglaze, scraping the pan’s bottom.
  11. Stir in the remaining butter and fresh parsley, simmer for five minutes.
  12. Pour the parsley butter sauce over the chicken and shrimp; serve warm and enjoy.
