4 Lbs Sweet Potatoes diced
1/2 Cup Butter
1–1/4 Cups Karo Light Corn Syrup
1/4 Cup Honey
2 Tbs Vanilla
3/4 Cup Brown Sugar
1/2 Cup White Sugar
1 Tbs Cinnamon
1/4 Tsp Nutmeg
1/4 Tsp Salt
Instructions
Remove the skins from the sweet potatoes and cut them into similarly sized pieces.
In a large bowl, add salt and lemon juice to cool water, then soak the sweet potatoes for 10 to 15 minutes before rinsing them well.
Heat the oven to 350°F.
Mix the corn syrup, honey, sugars, and half the spices in your baking dish until combined.
Put the sweet potatoes into the dish, scatter the butter on top, and sprinkle with the remaining spices.
Cover the dish tightly with foil and place in the oven.
Bake covered for an hour and a half, then take off the foil and stir the yams well.
Continue to bake uncovered for another 30 minutes before removing from the oven.
