This Cheddar and Herb Soda Bread is a delightful twist on traditional Irish soda bread. Perfect for an easy soda bread recipe, it combines fresh herbs and sharp cheddar cheese for a flavorful loaf. Enjoy a delicious beer cheese bread or Irish soda bread easy to make at home.

Ingredients

  • 4 cups all-purpose flour plus extra as needed
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp each chopped fresh thyme rosemary and sage
  • 1 cup shredded cheddar cheese
  • 1 ¾ cups buttermilk

Instructions

  1. Preheat the oven to 425°F.
  2. In a mixing bowl combine the flour baking soda and salt and stir together.
  3. Add the chopped fresh herbs and shredded cheese.
  4. Add the buttermilk and stir until combined.
  5. Turn the dough out onto a lightly floured counter and knead lightly just a couple of times to make a smooth ball.
  6. Shape into a ball and pat out into a 7-inch circle.
  7. Lightly flour a baking sheet and transfer the dough to it.
  8. Dust the top with more flour and use a sharp knife to score a cross about 1/2 inch deep.
  9. Bake for 15 minutes then reduce heat to 375°F and bake for another 30 to 35 minutes until fully baked.
  10. After baking wrap the bread in a tea towel to cool to soften the crust.

Notes

  • For crisp tops, broil 2–3 minutes at the end
