  • 1 onion chopped
  • 1 garlic clove minced
  • 1 cup long-grain rice uncooked
  • 2 cups beef broth
  • 1 (10.75 oz) can cream of mushroom soup
  • 1 cup cheddar cheese shredded
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ cup fresh parsley chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and onion is tender. Drain excess fat.
  3. Stir in uncooked rice, beef broth, cream of mushroom soup, salt, pepper, and paprika. Bring to a boil.
  4. Transfer mixture to a greased 9×13 inch baking dish. Cover with foil and bake for 35-40 minutes or until rice is tender.
  5. Remove foil, sprinkle cheddar cheese on top, and bake uncovered for an additional 5 minutes or until cheese is melted.
  6. Garnish with chopped fresh parsley before serving.
