This cheesy rotel ranch queso is a creamy and delicious dip perfect for game days and parties. It combines velveeta cheese and ranch seasoning for an easy rotel queso velveeta ranch dip with a spicy twist. A southern rotel ranch queso party appetizer everyone will love.

  • 1 lb Velveeta cheese cubed
  • 1 can 10 oz Rotel tomatoes with green chilies mild or spicy
  • 4 oz cream cheese softened
  • ½ cup milk or heavy cream adjust as needed
  • 1 packet 1 oz ranch seasoning mix
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ lb ground beef or sausage optional
  • Fresh cilantro or parsley for garnish optional

Instructions

  1. Brown the ground beef or sausage in a skillet over medium heat until fully cooked, then drain the excess grease and set the meat aside.
  2. Melt the Velveeta cheese and cream cheese together in a large saucepan or slow cooker over low heat, stirring occasionally until smooth.
  3. Add the Rotel tomatoes with juices, ranch seasoning mix, garlic powder, and onion powder, stirring well to combine.
  4. Gradually pour in milk or heavy cream to reach the queso thickness you like, stirring until fully incorporated.
  5. Mix in the cooked meat if using, and heat for a few more minutes to blend the flavors.
  6. Transfer the queso to a serving bowl or keep warm in a slow cooker, garnish with fresh cilantro or parsley if desired, and serve hot with chips or your favorite dippers.
