  • 1.5lb chicken thighs
  • 1/2 cup chipotles in adobo sauce
  • 1 lime juiced
  • 2 garlic cloves
  • 1 tbsp extra virgin olive oil
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups jasmine rice
  • 2 tbsp cilantro
  • 1 lime juiced
  • 1 green pepper
  • 1 red pepper
  • 1/2 cup yellow onion
  • 1/2 tsp sea salt
  • 1 tbsp olive oil
  • 1/2 cup black beans
  • 1/2 cup roasted corn
  • 1/4 cup mayo
  • 2 tsp hot sauce
  • 1/4 tsp cumin
  • 1/4 lime juiced
  • 1/2 tsp chili powder

Instructions

  1. Blend chipotle peppers, lime juice, garlic, olive oil, cumin, oregano, salt, and some water to make the marinade.
  2. Marinate the chicken thighs in the mixture for 2 to 3 hours.
  3. Season the chicken with salt and pepper, then cook it in a cast iron skillet until the internal temperature reaches 165 degrees, then let it rest.
  4. Combine jasmine rice with cilantro and lime juice for the cilantro lime rice.
  5. Mix mayo, cumin, lime juice, chili powder, and hot sauce to create the creamy sauce.
  6. Chop peppers and onion, sauté them with olive oil and sea salt in a skillet.
  7. Rinse black beans and warm roasted corn.
  8. Assemble the bowl with rice, sautéed vegetables, black beans, corn, and sliced chicken.
  9. Drizzle the creamy sauce on top and serve.

  • Chicken will make enough for more than 2 bowls
