Ingredients

  • 1 pound white fish fillets (such as cod or tilapia)
  • cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion
  • finely chopped
  • 2 garlic cloves
  • minced
  • 1 tablespoon ginger
  • grated
  • 1 red bell pepper
  • sliced
  • 1 can (14 oz) coconut milk
  • 2 cups fish or chicken broth
  • 3 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro
  • chopped
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, and ginger; cook until fragrant and soft.
  3. Stir in red bell pepper and cook for another 2 minutes.
  4. Pour in coconut milk and broth; bring to a simmer.
  5. Add fish sauce, lime juice, sugar, salt, and pepper; stir well.
  6. Add the fish pieces and simmer until cooked through, about 5-7 minutes.
  7. Remove from heat; stir in fresh cilantro.
  8. Serve hot with lime wedges.

Notes
