  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon celery seed
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • 4 boneless skinless chicken breasts
  • 1 pound medium shrimp peeled and deveined
  • 2 tablespoons extra virgin olive oil divided use
  • 1 tablespoon minced garlic
  • ½ cup unsalted butter divided use
  • ¼ cup chicken bone broth
  • 1 cup baby bella mushrooms sliced
  • 1 white onion sliced
  • 1 teaspoon dried parsley
  • ¼ cup fresh parsley

Instructions

  1. Mix all the cajun seasoning ingredients and split the mix into two parts.
  2. Coat the chicken breasts evenly with one half of the seasoning mixture, pressing it gently for good coverage.
  3. Toss the shrimp with the remaining seasoning and 1 tablespoon olive oil in a bowl until fully coated.
  4. Heat a frying pan over medium heat and melt 2 tablespoons butter.
  5. Add mushrooms and onions to the pan, seasoning lightly, then cook until tender, about 10 minutes, stirring frequently.
  6. Transfer the cooked onions and mushrooms to a low-heat skillet with a thin layer of olive oil to keep warm.
  7. Increase the frying pan heat to high and add a splash of olive oil.
  8. Sear chicken breasts for 4 to 5 minutes per side until fully cooked to 165°F internal temperature, then place them on top of the onions in the skillet.
  9. Add 1 tablespoon butter to the pan then cook shrimp for 1 minute on each side until just done, then add them next to the chicken in the skillet.
  10. Reduce pan heat to medium and sauté minced garlic for 1 minute.
  11. Pour in chicken broth and deglaze the pan by scraping the bottom.
  12. Stir in remaining butter and fresh parsley, cooking for 5 minutes to create a sauce.
  13. Spoon the parsley butter over the chicken and shrimp, then serve immediately.
