Combine hoisin sauce, soy sauce, sesame oil, garlic, and ginger in a bowl and add the chopped chicken, mix well and let it marinate for 15 minutes.
Preheat the oven to 375F.
Toss the coleslaw mix, green onions, rice vinegar, soy sauce, sesame oil, and honey in a small bowl and chill until needed.
