  • 2 Boneless skinless Chicken Breasts cut into 1 inch pieces
  • 1 cup Dill Pickle Juice
  • 1 large egg
  • 1 cup Milk
  • 1 cup All Purpose Flour
  • 1 Tbsp Confectioners’ Sugar
  • 1 tsp Paprika
  • 1 tsp Pepper
  • 1 tsp Salt
  • Peanut Oil or Canola Oil for Frying

Instructions

  1. Cut the chicken breasts into 1 inch pieces and place them in a bowl with dill pickle juice. Cover and let them marinate in the refrigerator for 30 to 60 minutes or overnight if possible.
  2. Drain the pickle juice from the chicken and set the chicken aside.
  3. In a large bowl, whisk together the egg and milk then add the chicken pieces and coat them well.
  4. Mix flour, confectioners’ sugar, paprika, pepper, and salt in a large ziplock bag and shake to combine.
  5. Remove the excess milk mixture from chicken then place chicken pieces in the flour mixture bag and shake thoroughly until coated.
  6. Heat peanut or canola oil in a pan over medium heat or prepare a fryer.
  7. Fry the chicken in batches for 3 to 5 minutes until golden brown and crispy.
  8. Remove chicken and drain on paper towels to absorb excess oil.
  9. Serve warm immediately with your favorite dipping sauces.
