Ingredients

Scale
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons finely chopped pickles
  • 2 teaspoons dijon mustard
  • 1 ½ teaspoons vegetable oil divided
  • 4 hamburger buns
  • 16 dill pickle slices
  • 4 slices tomato I recommend ¼ inch slices
  • 4 leaves iceberg lettuce
  • 1 pound ground beef 80/20 divided into 2 ounce balls
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup yellow mustard
  • 8 slices American cheese
  • ½ cup caramelized onions diced

Instructions

  1. Begin by caramelizing the onions if they are not prepared yet.
  2. Combine mayonnaise, ketchup, finely chopped pickles, and dijon mustard to make the burger spread, then set it aside.
  3. Heat a griddle to medium-high and toast the buns face-down with ½ teaspoon vegetable oil for about a minute until they turn golden.
  4. Spread 2 tablespoons of the burger spread on the bottom halves of the buns and layer with pickle slices, tomato slices, and lettuce leaves.
  5. Form the ground beef into eight 2 ounce balls and flatten each into approximately 4 inch patties, seasoning both sides with salt and pepper.
  6. Add a teaspoon of oil to the griddle and wait until it starts to smoke, then cook the patties for 2 minutes and 30 seconds.
  7. Spread 1 tablespoon of yellow mustard on the raw side of each patty, flip them so the mustard side cooks downwards, and continue cooking for 1 minute.
  8. Place a slice of American cheese on each patty and add 2 tablespoons of caramelized onions on four of them. Stack the plain patties on top of the onion-topped patties.
  9. Transfer the stacked patties onto the prepared buns and add the top buns. Serve the burgers right away.

Notes

  • To enjoy these burgers protein style, swap the buns for large iceberg lettuce leaves for a gluten-free and low-carb option
  • Caramelized onions can be prepared ahead and stored in the refrigerator or freezer
  • Avoid pressing the patties on the griddle to keep them juicy and tender
  • If you lack a griddle, a skillet can be used but might limit the number of patties cooked at once
