  • 1/4 cup canola oil
  • 11/2 pounds boneless skinless chicken breasts butterflied and pounded 1/2 inch thick
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 8 ounces thinly sliced fresh white or cremini mushrooms
  • 2 garlic cloves minced
  • 11/2 cups Marsala wine
  • 1 ounce dried porcini mushrooms optional
  • 1/2 cup chicken broth
  • 11/2 tablespoons packed brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon butter
  • Fresh chopped parsley for serving
  • Grated Parmesan cheese for serving

Instructions

  1. Warm the canola oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper then coat them with flour, shaking off any extra.
  2. Place the chicken in the hot skillet and cook until one side turns golden, about 3 to 4 minutes, then flip and cook 4 to 5 minutes longer until fully cooked. Remove the chicken and rest it on a plate lined with paper towels.
  3. Add olive oil to the same skillet and heat over medium heat. Toss in the mushrooms and cook until they’re softened, roughly 3 minutes. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Pour in the Marsala wine to deglaze the pan, adding dried porcini mushrooms if using. Let the sauce boil, then reduce to a simmer and cook until the wine has reduced by half and the dried mushrooms have softened.
  5. Whisk in the chicken broth, brown sugar, Dijon mustard, and Worcestershire sauce, seasoning with salt and pepper to taste. Stir in the butter until it melts completely.
  6. Return the chicken to the skillet and keep warm over low heat until serving. Garnish with freshly chopped parsley and grated Parmesan cheese.
