1/2 cup mayonnaise Hellmann’s if you wanna be legit
1 tablespoon ketchup
1 teaspoon pickle brine
1/4 teaspoon ground cayenne
Pinch paprika
2 tablespoons unsalted butter melted
Martin’s Potato Rolls or White Hamburger Buns
1 pound sirloin cut into 1-inch pieces
1 pound chuck cut into 1-inch pieces
OR 2 pounds ground beef 85/25
Sea salt
Freshly ground pepper
Vegetable oil
8 slices of American cheese
Roma tomatoes cut into 1/2-inch slices
Leafy Green Lettuce
Sliced pickles
Baked crinkle fries
Ketchup + Mustard
Instructions
Combine all special sauce ingredients in a bowl and whisk thoroughly until smooth, then transfer to a small bowl or squeeze bottle and set it aside.
Brush the tops and bottoms of the buns with melted butter, heat a pan over medium heat until warm, and toast each bun for 1 to 2 minutes on each side, repeating until all buns are toasted.
If grinding your own meat, mix the sirloin and chuck cubes in a bowl, grind with large grinder attachment at speed 4, then grind again with the smaller attachment; divide into 4-ounce portions. If using pre-ground beef, simply portion into 4-ounce mounds.
Shape each portion into a puck about 2 inches wide and 2 inches tall, sprinkle salt and pepper on top.
Heat a cast iron skillet over moderately high heat, add a few teaspoons of vegetable oil, and when the oil is nearly smoking, place a meat puck in the pan. Cook for about 30 seconds and then press down firmly with a spatula to flatten to about 1/4 inch thickness.
Let cook for 1 minute, season with salt and pepper, then flip the patty. Immediately add a slice of American cheese on top and cook for another minute. Remove cooked patties and repeat for remaining meat.
To assemble, spread a little special sauce on both halves of each bun, layer with leafy green lettuce, tomato slices, then the cheeseburger patty, and top with sliced pickles before placing the top bun on.
Serve sandwiches with baked crinkle fries, and ketchup and mustard on the side.
