4 slices bacon or turkey bacon diced
8 eggs whisked
1 cup cottage cheese
1 cup gruyere cheese shredded
1 tbsp cornstarch
1/4 tsp salt
Instructions
Set your oven to 300 F and bring water to a boil.
Cook the bacon in a sprayed skillet on medium-high heat for about 4-5 minutes then drain and set aside.
Blend cottage cheese, shredded gruyere, cornstarch, and salt on high until smooth, then add eggs and blend briefly.
Grease a 12-count metal muffin tin and place it over a 9×13 baking sheet. Distribute cooked bacon into cups and pour the egg mixture over.
Carefully pour boiling water into the baking sheet to cover the bottom of the muffin cups.
Bake for 30 minutes until set, then remove the muffin tin and water bath. Let the egg bites cool before serving.
