For the Cowboy Butter

  • 1/2 cup unsalted butter
  • 34 garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp crushed red pepper flakes
  • 1 tsp smoked paprika Salt & pepper to taste

For the Chicken

  • 2 boneless, skinless chicken breasts (sliced thin or cubed)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt & black pepper
  • Optional: 1/2 tsp smoked paprika or cayenne

For the Pasta

  • 12 oz linguine (or pasta of choice)
  • Salted water for boiling
  • 1/2 cup reserved pasta water

Optional Garnishes

  • Grated Parmesan
  • Extra parsley
  • Lemon wedges
  • Crushed red pepper

Instructions

  1. Make the cowboy butter: In a saucepan, melt butter over low heat. Add garlic, lemon juice, zest, Dijon mustard, red pepper flakes, smoked paprika, salt, and pepper. Stir until combined. Remove from heat, stir in chopped parsley.
  2. Cook pasta: Boil linguine in salted water until al dente. Reserve ½ cup of pasta water before draining.
  3. Cook chicken: While pasta cooks, heat olive oil in a large skillet. Season chicken with garlic powder, salt, pepper, and smoked paprika. Sear for 6–7 minutes, flipping halfway, until golden and cooked through.
  4. Combine: Lower the heat. Add cowboy butter and cooked pasta to the skillet with the chicken. Toss well, adding pasta water a bit at a time until silky and fully coated.
  5. Serve: Top with Parmesan, extra parsley, and a squeeze of lemon. Serve hot and bask in the compliments.
