  • 4 medium bone-in chicken thighs 1-1/2 lbs
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 3 medium apples peeled cored and sliced in ¼ inch thick slices
  • 1 cup fresh cranberries
  • 3 sprigs fresh rosemary
  • 1 tablespoon olive oil
  • 1 garlic clove minced
  • 3 tablespoons balsamic vinegar
  • ¼ cup maple syrup
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs generously with salt and pepper on both sides.
  2. Warm the butter and olive oil in a medium skillet over medium-high heat until hot, then brown the chicken for 2-3 minutes on each side.
  3. Take the pan off the heat and nestle the apple slices, cranberries, and rosemary sprigs around the chicken pieces.
  4. Transfer the skillet to an oven preheated to 375F and roast for 25 to 30 minutes until the chicken reaches 165F and the fruit softens and bursts.
  5. While the chicken roasts, prepare the maple glaze by heating olive oil in a small skillet over medium-high heat, then sauté the minced garlic for about 1 minute until fragrant.
  6. Add the balsamic vinegar and maple syrup, bring to a boil, reduce heat to medium-low, and simmer for 5 minutes until thickened. Season with salt and pepper.
  7. When the chicken is done, pour the maple glaze over it before serving.
