  • 2 tablespoons butter
  • 1 large sweet onion peeled and chopped
  • 34 cloves garlic minced
  • ¼ cup chopped cilantro
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans drained
  • 7 ounces chopped green chiles mild or hot
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 8 ounces cream cheese cut into cubes (could be low fat)

Instructions

  1. In a large pot or slow cooker, heat butter over medium heat and sauté the chopped sweet onion until translucent.
  2. Add the minced garlic, ground cumin, and dried oregano and cook for another minute until fragrant.
  3. Add the boneless chicken breast, canned cannellini beans, chopped green chiles, frozen corn, and chicken broth to the pot.
  4. Bring to a boil then reduce heat and simmer for 20-25 minutes or until the chicken is cooked through.
  5. Remove the chicken and shred it with two forks, then return to the pot.
  6. Stir in the cream cheese cubes until melted and incorporated, creating a creamy texture.
