1 pound cod filets
salt to taste
ground black pepper to taste
½ cup all-purpose flour
2 large eggs
½ teaspoon salt
1 cup plain panko bread crumbs
½ cup grated parmesan cheese
2 teaspoons old bay seasoning
½ teaspoon garlic powder
olive oil spray
Instructions
Season the cod filets on both sides with salt and ground black pepper.
Set up three separate bowls; place all-purpose flour in the first bowl.
Coat each filet lightly with the flour from the first bowl.
In the second bowl, beat together the eggs with salt, then dip each floured filet into the egg mixture.
Mix panko bread crumbs, grated parmesan cheese, old bay seasoning, and garlic powder in the third bowl, then press each egg-coated filet into the panko mixture until well covered.
