Ingredients

  • 3 15 oz cans organic low sodium garbanzo beans (1 can per flavor)
  • 12 tbsp olive oil
  • Sweet 1 tbsp maple syrup
  • ½ tsp cinnamon
  • Ranch 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried dill
  • ½ tsp dried parsley
  • ½ tsp salt
  • Spicy ½ tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp cayenne pepper
  • ¼ tsp garlic powder
  • ¼ tsp salt

Instructions

  1. Set your oven to 400 degrees Fahrenheit to warm up.
  2. Rinse the chickpeas well in a strainer and then dry them thoroughly on a kitchen towel, removing any loose skins. Let them air dry completely.
  3. Prepare a baking sheet with a silicone mat or parchment paper and lightly mist with oil if using parchment.
  4. Arrange the chickpeas evenly on the sheet and bake them, stirring every 10 minutes, until they turn golden brown, approximately 20 to 30 minutes.
  5. Mix the seasoning blends for sweet, ranch, and spicy flavors in separate small bowls.
  6. While still warm, divide the chickpeas into three portions. Coat the ranch and spicy portions with olive oil then toss them with their respective spice mixtures.
  7. Add the maple syrup and cinnamon mix to the sweet portion, toss to coat well, and return to the oven for another 5 to 10 minutes.
  8. Serve the chickpeas immediately for the best crunch.

Notes

  • You can store the crispy roasted chickpeas in an airtight container but note that the texture will become chewier and less crispy as the chickpeas sit
