  • 1 lb. ground beef
  • ½ a white onion chopped
  • 2 garlic cloves minced
  • 14.5 oz canned fire roasted diced tomatoes (not drained)
  • 1 Tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 sweet potatoes
  • Olive oil
  • Toppings: guacamole
  • cheddar cheese
  • pico de gallo
  • sour cream etc

Instructions

  1. Begin by preheating your oven to 425 degrees and prepare a baking sheet with parchment paper.
  2. Scrub and wash the sweet potatoes thoroughly then pat them dry. Pierce the potatoes several times with a fork, rub them with olive oil, and sprinkle salt and pepper on all sides.
  3. Place the potatoes on the baking sheet and roast for 40 to 45 minutes until they become tender inside.
  4. While the potatoes are baking, heat olive oil in a frying pan over medium-high heat. Add the chopped onions and minced garlic and cook until softened.
  5. Add ground beef and seasoning, cook until the meat is browned thoroughly, then pour in the canned tomatoes and simmer until most liquid cooks off, about 5 to 7 minutes.
  6. When potatoes are ready, slice them lengthwise and fluff the flesh with a fork. Fill each potato half with the prepared taco meat.
  7. Top with your preferred taco toppings and serve immediately.

Notes

  • For crisp tops, broil 2–3 minutes at the end
