  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 small yellow onion
  • 1 pound boneless skinless chicken breasts or thighs
  • 1/2 teaspoon kosher salt
  • 2 tablespoons vegetable oil
  • 1 (1-ounce) packet taco seasoning mix
  • 1 (about 15-ounce) can black beans
  • 1 (15-ounce) can diced tomatoes
  • 1 1/2 cups instant brown rice
  • 1 cup low-sodium chicken broth
  • 1/3 cup shredded Mexican cheese blend

Instructions

  1. Prepare the red and green bell peppers by removing cores and seeds, then slice them into 1/4 inch strips. Chop the yellow onion finely. Cut the chicken into 1 inch chunks and sprinkle with kosher salt.
  2. Warm the vegetable oil in a large skillet over medium-high heat until it shimmers. Add the chicken pieces, onion, peppers, and the taco seasoning packet. Sauté the mixture, stirring frequently, until the vegetables soften, about 5 to 8 minutes.
  3. While cooking, rinse and drain the black beans. Add the beans, diced tomatoes including their juices, instant brown rice, and chicken broth to the skillet. Stir everything together and bring it to a boil.
  4. Lower the heat and cover the skillet. Let the dish simmer until the chicken is fully cooked and the rice becomes tender, around 8 to 10 minutes. Turn off the heat and keep covered for an additional 5 minutes to absorb remaining liquid.
  5. Finish by sprinkling shredded Mexican cheese over the top and adding any preferred garnishes.
