2 chicken breasts cubed
4–5 small or medium-sized potatoes cubed
Olive oil for tossing the potatoes
Salt pepper garlic powder paprika for seasoning potatoes
2 tablespoons butter
½ teaspoon each of salt and pepper for seasoning chicken
1 teaspoon each of paprika onion powder and Italian seasoning
2 tablespoons minced garlic
Buffalo Wild Wings Garlic Parmesan Sauce as desired
1 cup shredded mozzarella cheese
Instructions
Wash and peel the potatoes, then dice them into small cubes. Toss the potatoes with olive oil and season with salt, pepper, garlic powder, and paprika until evenly covered.
Preheat the air fryer to 400°F and cook the potatoes for about 20 minutes, shaking the basket occasionally to promote even crisping.
While the potatoes cook, cut chicken breasts into cubes and season them with salt, pepper, paprika, onion powder, and Italian seasoning.
Melt butter in a skillet over medium-high heat, then sauté the chicken until fully cooked and the internal temperature reaches 165°F.
Add minced garlic and the Garlic Parmesan Sauce to the skillet, stirring well to coat the chicken for 1 to 2 minutes.
Mix the cooked potatoes into the skillet, tossing everything together to combine with the sauce.
Sprinkle mozzarella cheese over the skillet and cover until melted or place under a broiler briefly until the cheese bubbles and turns golden.

For extra flavor, consider adding a sprinkle of fresh parsley or grated Parmesan cheese before serving
