Ingredients
- large shrimp peeled and deveined olive oil smoked paprika cumin chili powder garlic powder lime juice salt pepper chopped fresh cilantro corn finely diced red bell pepper diced green onions chopped fresh cilantro lime juice salt ripe avocados lime juice salt pepper mayo or Greek yogurt lime juice hot sauce garlic powder smoked paprika chopped cilantro salt
Instructions
- Preheat grill to medium-high heat.
- In a bowl, toss shrimp with olive oil smoked paprika cumin chili powder garlic powder lime juice salt and pepper.
- Grill shrimp for 2-3 minutes per side until cooked through.
- In another bowl combine corn red bell pepper green onions cilantro lime juice and salt to make corn salsa.
- Mash avocados with lime juice salt and pepper to create avocado mash.
- Mix mayo or Greek yogurt with lime juice hot sauce garlic powder smoked paprika cilantro and salt to prepare creamy sauce.
- Assemble bowl with cooked rice or greens shrimp corn salsa avocado mash and drizzle creamy sauce on top.
- Garnish with chopped cilantro and serve with lime wedges.
