Ingredients

  • 10 oz fresh blueberries
  • 1 cup plain flour
  • 3/4 cup thick greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 1/2 cup vanilla-flavored protein powder

Instructions

  1. Heat your oven to 360°F or 180°C to prepare for baking.
  2. In a large bowl, whisk together the egg, honey, greek yogurt, vanilla extract, and olive oil until smooth.
  3. Add the flour, protein powder, baking powder, and baking soda, stirring gently just until everything is mixed.
  4. Carefully fold the blueberries into the batter so they stay whole and evenly spread.
  5. Divide the batter evenly into a lined muffin pan and bake in the oven for 15 to 20 minutes until a toothpick comes out clean.
  6. Let the muffins sit for a few minutes in the pan before moving them to a rack or plate to cool completely.

Notes

  • For crisp tops, broil 2–3 minutes at the end
