  • 1 cup Cold Butter cut into cubes if you want a slightly thinner cookie microwave for 78 seconds
  • 1 cup Brown Sugar
  • 3/4 cup Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla
  • 2 3/4 cups Flour may use all-purpose or 1 cup cake flour and 1 3/4 cups of all-purpose flour
  • 1 teaspoon Cornstarch
  • 3/4 teaspoon Baking Soda
  • 3/4 teaspoon Salt
  • 2 to 2 1/2 cups Chocolate Chips semi-sweet or mix of milk chocolate and semi-sweet

Instructions

  1. Warm your oven to 400 degrees or 385 degrees if you think your oven runs hot.
  2. Beat together butter with brown sugar and sugar for about 4 minutes until the mixture is fluffy and pale.
  3. Add eggs and vanilla and mix them into the batter for one more minute.
  4. Gently combine the flour, cornstarch, baking soda, and salt into the wet ingredients until just mixed.
  5. Incorporate the chocolate chips by folding them in carefully.
  6. If possible, chill the cookie dough tightly wrapped in plastic for 24 hours, otherwise, scoop the dough onto baking sheets lined with parchment or silicone mats.
  7. Bake for 8 to 11 minutes until the edges turn a light golden shade.
  8. Let the cookies cool on the sheet for 5 minutes before transferring them to a rack or plate.

Notes

  • If you chill the cookie dough, make sure to tightly wrap it so it isn’t exposed to air
  • Once you are ready to bake, let the dough rest at room temperature for 15 to 30 minutes to soften
  • If it’s crumbly, press it back into balls by hand
  • Choose semi-sweet or milk chocolate chips based on preference
