3/4 cup honey
1/3 cup chipotle chiles in adobo sauce just the sauce not the peppers
3 tablespoons ketchup
1 tablespoon vinegar
2 pounds chicken tenderloins
1 1/2 cups flour
1/2 cup cornstarch
2 teaspoons baking powder
1/2 teaspoon garlic salt
1/2 teaspoon smoked paprika
1 cup milk
2 cups light oil for frying
Instructions
In a shallow bowl, combine the flour, cornstarch, baking powder, garlic salt, and smoked paprika and whisk together.
Coat the chicken tenderloins lightly with the flour mixture then set them aside.
Pour the milk and one tablespoon of the flour mixture into another shallow dish.
Dip the floured chicken into the milk mixture.
Dredge the chicken once again in the flour mixture and set aside.
Heat oil in a large frying pan over medium-high heat.
When the oil hits 350 degrees, fry the chicken in batches without crowding.
Cook the chicken for 2 to 3 minutes per side until golden and crispy.
Drain the fried chicken on paper towels or a wire rack.
Prepare the sauce by mixing honey, chipotle sauce, ketchup, and vinegar in a small saucepan.
Warm the sauce over medium-high heat until it starts bubbling.
Allow it to simmer for 5 minutes until it thickens.
Toss the cooked chicken in the sauce.
Serve immediately.
Notes
Store leftovers in an airtight container in refrigerator for up to 3 days
You can reduce chipotle for a milder version
Feel free to add extra seasoning to the flour mixture
