  • 4 cups vegetable broth or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon basil
  • 1 1/2 teaspoons salt adjust to taste
  • 1 teaspoon black pepper adjust to taste

Instructions

  1. Activate the Instant Pot on sauté and melt butter with olive oil, then add diced onion, grated carrots, and minced garlic to soften and fragrant stirring for about 5 minutes.
  2. Mix in tomato paste and keep cooking for 2 minutes to enhance the flavor.
  3. Pour in whole tomatoes with their juices and broth, stir well to combine.
  4. Seal the lid and set the valve to sealing, cook on high pressure for 8 minutes.
  5. Release pressure quickly when done and blend soup with an immersion blender until smooth and creamy.
  6. Stir in heavy cream, basil, salt, and pepper adjusting seasoning if needed.
  7. Serve the bisque in bowls with optional fresh basil or a cream swirl.
