  • 2 cup Leftover Chicken shredded
  • 1 Egg beaten
  • ½ cup Golden Breadcrumbs
  • ½ cup Panko Breadcrumbs
  • ½ tsp Salt
  • ½ tsp Black Pepper
  • 1 tsp Paprika
  • ½ tsp Chilli Powder
  • 2 tbsp Butter
  • 2 heaped tbsp Plain Flour
  • 1 cup Milk
  • ⅓ cup Grated Cheese
  • ½ tsp Garlic Powder
  • ½ cube Chicken Bouillon
  • ½ Onion diced
  • 2 tbsp Fresh Coriander Leaves chopped

Instructions

  1. Melt the butter in a saucepan over medium heat and stir in the plain flour to create a roux.
  2. Gradually whisk in the milk and continue stirring for about 5 minutes until the mixture thickens.
  3. Add grated cheese and season with salt, black pepper, paprika, chilli powder, garlic powder, and crumble in the bouillon cube, then stir well.
  4. Remove from the heat and fold in shredded chicken, diced onion, and chopped coriander; mix thoroughly and let it cool.
  5. In separate shallow bowls, combine panko and golden breadcrumbs, and place the beaten egg ready for coating.
  6. Scoop spoonfuls of the chicken mixture, shape into balls, dip them in the egg, then roll in the breadcrumb mixture to coat.
  7. Preheat the air fryer to 200°C and lightly oil the basket.
  8. Arrange the croquettes in the basket, brush them with oil, and cook for 5 minutes.
  9. Flip the croquettes, brush again with oil, and continue cooking another 5 minutes until they are golden and crispy.
  10. Let the croquettes cool slightly before serving.
