  • 2 chicken breasts 1 ½-2 lbs
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsps flour
  • 2 tbsps olive oil
  • 1 shallot
  • 1 tbsp minced garlic 2-3 medium cloves
  • 1 cup chicken broth
  • 3 tbsps lemon juice
  • ¼ cup sun dried tomatoes chopped
  • ¼ cup capers drained
  • ¼ cup cream
  • 4 tbsps butter
  • 1 tbsp parsley garnish
  • 4 slices lemon

Instructions

  1. Cut the chicken breasts in half lengthwise to thin them out.
  2. In a bowl, combine flour, salt, and pepper, then coat the chicken with this mixture.
  3. Heat 1 tablespoon of olive oil in a skillet on medium heat until hot and add the chicken. Cook each side for 4 to 5 minutes until fully cooked. Set the chicken aside on a plate lined with paper towels.
  4. Add the remaining oil to the skillet and sauté the shallots for about one minute.
  5. Add minced garlic and cook for another minute.
  6. Stir in the reserved flour and cook for one minute.
  7. Pour half of the chicken broth into the pan to scrape up browned bits, then add the remaining broth and lemon juice. Cook until the sauce thickens.
  8. Mix in sun-dried tomatoes, capers, cream, and butter, stirring until the butter melts and the sauce is smooth.
  9. Return the chicken to the skillet and spoon some sauce over it, warming it through.
  10. Garnish with parsley and lemon slices before serving.
