  • 34 medium sweet potatoes
  • 1 tbsp olive oil
  • ½ tsp salt
  • 1 can chickpeas
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp salt
  • ½ cup hummus
  • ½ small red onion
  • ⅓ cup chopped parsley
  • ⅓ cup vegan feta cheese optional

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and pierce the sweet potatoes with a fork, then rub them with 1 tbsp olive oil and ½ tsp salt.
  3. Place the sweet potatoes on a baking sheet and roast for 25 minutes or until tender.
  4. While the sweet potatoes roast, drain and rinse the chickpeas. Toss them with 1 tbsp olive oil, ½ tsp paprika, and ½ tsp salt.
  5. Spread the chickpeas on a baking sheet and roast them in the oven for 20-25 minutes until crispy.
  6. Once roasted, slice the sweet potatoes open and top with ½ cup hummus, roasted chickpeas, ½ small red onion, ⅓ cup chopped parsley, and ⅓ cup vegan feta cheese if using.
