  • olive oil spray
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp tomato paste
  • 14.5 oz fire roasted diced tomatoes 1 can
  • 4 oz diced green chilis canned
  • 32 oz chicken broth
  • 1 lb chicken breast raw
  • 1/2 tbsp cumin
  • 1/2 tbsp chili powder
  • 2 tsp paprika
  • 1/2 tsp kosher salt
  • 1 lime juiced
  • 1/4 cup cilantro chopped
  • 4 corn tortillas Used Mission Extra Thin Corn Tortillas

Instructions

  1. Preheat the dutch oven or large pot over medium heat.
  2. Add olive oil spray and chopped onion to the pot and saute for 5 minutes or until tender.
  3. Add the minced garlic and saute for 1-2 minutes until fragrant.
  4. Stir in the tomato paste.
  5. Pour in the fire roasted tomatoes, diced green chilis, and chicken broth.
  6. Add cumin, chili powder, paprika, and salt and stir to combine.
  7. Bring liquid to a boil on medium high heat.
  8. Place chicken breasts into boiling liquid, reduce heat to medium, and simmer for 20 minutes or until chicken is cooked through.
  9. Remove chicken, shred with forks, and return to pot.
  10. Add lime juice and cilantro.
  11. Tear tortillas into smaller pieces, stir in, and simmer until they dissolve.
  12. Serve as desired.
