  • 15 slices pepperoni cut in half I used regular pepperoni but you can use turkey pepperoni if you prefer

Instructions

  1. Heat your oven to 400F 200C and prepare an 8 inch x 11 inch glass casserole dish by spraying it with non-stick spray or olive oil.
  2. Rinse the diced tomatoes under cold water in a colander and let them drain completely on paper towels.
  3. Warm 2 tsp olive oil in a large non-stick pan over medium-high heat, remove sausage from casing, and cook it until browned, breaking it up as it cooks.
  4. While sausage cooks, clean and slice mushrooms into thick pieces.
  5. Layer the browned sausage in the casserole dish, then add the drained tomatoes on top and season with oregano, salt, and pepper.
