  • 3 large chicken breasts boneless and skinless sliced lengthwise into thin cutlets
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 6 tablespoons (50 g) all-purpose flour
  • 2 tablespoons (30 ml) olive oil
  • 2 tablespoons (28 g) unsalted butter
  • 3 cloves garlic minced
  • 1 cup (240 ml) chicken stock
  • 1 cup (240 ml) heavy cream (double cream in the UK)
  • ½ cup (43 g) grated parmesan cheese
  • 1 teaspoon chili flakes
  • ¼ teaspoon oregano
  • ¼ teaspoon thyme
  • ⅓ cup (50 g) sundried tomatoes chopped
  • 1 tablespoon fresh basil leaves

Instructions

  1. Season the chicken with salt and pepper then coat it lightly with flour, removing any excess.
  2. Warm olive oil and butter in a large skillet over medium heat, swirling to coat the pan.
  3. Cook the chicken pieces in batches without overcrowding for about 4 to 5 minutes per side until golden and fully cooked, then set aside covered.
  4. Add minced garlic to the skillet and cook just until fragrant, about a minute.
  5. Pour in chicken stock and scrape the pan bottom to loosen any browned bits.
  6. Lower the heat to medium-low and stir in heavy cream and parmesan cheese, allowing the sauce to gently simmer for a few minutes.
  7. Season with chili flakes, thyme, oregano, and additional salt and pepper to taste, then add the sundried tomatoes.
  8. Return the chicken to the sauce and let everything simmer until the sauce thickens slightly.
  9. Sprinkle fresh chopped basil over the top and serve warm with pasta or rice.

Notes

  • Chicken cutlets or steaks are often available pre-sliced but you can make your own by slicing chicken breasts flat into ¼ inch thick pieces
  • Using boneless skinless chicken thighs is a good alternative though they will need longer cooking
  • Adding a bit of sundried tomato oil while sautéing garlic can enhance flavor
  • Do not use half and half or single cream as the sauce won’t thicken properly
  • Freshly grated parmesan melts better and tastes richer than pre-grated store-bought cheese
  • Store leftovers sealed in the fridge up to 3 days, warm with a bit of water added to loosen the sauce
  • Avoid freezing as creamy sauces can become grainy when thawed
