This One Pan Weeknight Chicken Parmesan is an easy dinner perfect for family dinner nights. It features crispy breaded chicken parmesan with roasted potatoes and green beans, making it a delicious and simple one pan chicken recipe.

Ingredients

  • lb chicken breast about 34 pieces approx. 1 inch thick
  • 2 Tbsp olive oil
  • 2 garlic cloves minced
  • ⅓ cup grated parmesan
  • ⅓ cup breadcrumbs Italian or plain–can add 1 tsp Italian seasoning to plain breadcrumbs!
  • ½ tsp cracked pepper
  • ½¾ tsp sea salt
  • 2 lb red potatoes cut into bite sized pieces if small quartered larger potatoes will be cut into 6ths or 8ths even
  • 12 garlic clove minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • salt and pepper to taste
  • 1 lb fresh green beans ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove minced
  • 1 Tbsp parmesan optional
  • salt and pepper to taste

Instructions

  1. Heat your oven to 425°F. Prepare a sheet pan by lining it with parchment paper or spraying it lightly with cooking oil. Mix the potatoes with their ingredients and spread them on one third of the pan, then bake for 10 to 15 minutes until browned to your liking.
  2. While potatoes roast, coat the chicken with its mixture in a bowl. Remove the pan, add the chicken next to the potatoes, then prepare the green beans by tossing them with their ingredients and placing them on the pan as well.
  3. Return the pan to the oven and cook all items for about 25 minutes or until the chicken reaches 165°F internally. Optionally, broil on high for 4 to 5 minutes to crisp the potatoes further.
  4. Let the pan cool for a few minutes before serving.

Notes

  • The cooking time may vary depending on the thickness and size of your chicken breasts
  • Adjust seasoning to your preference as needed
  • Using a rack on the sheet pan can help keep the chicken bottom crispy by letting moisture drain off
  • Feel free to add Italian seasoning or oregano for extra flavor in chicken and potatoes
