250 g uncooked spaghetti
500 g fresh tomatoes chopped
2 tablespoons olive oil
3 cloves garlic minced
1 onion finely chopped
500 ml chicken stock
150 ml double cream
½ bunch fresh basil
Instructions
Heat olive oil in a large pot over medium heat.
Add garlic and onion and sauté until translucent.
Add chopped tomatoes and cook for 5 minutes.
Pour in chicken stock and bring to boil.
Add spaghetti and cook until pasta is al dente, stirring occasionally.
Stir in double cream and chopped basil.
Cook for another 2 minutes until sauce is creamy.
Serve hot garnished with extra basil if desired.
Notes
Use fresh basil for best flavor and adjust cream quantity for preferred richness
