This one pot creamy tomato pasta is a quick and delicious dinner option that combines fresh tomatoes and creamy sauce for a comforting meal ready in just 30 minutes.

Ingredients

  • 250 g uncooked spaghetti
  • 500 g fresh tomatoes chopped
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 onion finely chopped
  • 500 ml chicken stock
  • 150 ml double cream
  • ½ bunch fresh basil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add garlic and onion and sauté until translucent.
  3. Add chopped tomatoes and cook for 5 minutes.
  4. Pour in chicken stock and bring to boil.
  5. Add spaghetti and cook until pasta is al dente, stirring occasionally.
  6. Stir in double cream and chopped basil.
  7. Cook for another 2 minutes until sauce is creamy.
  8. Serve hot garnished with extra basil if desired.
