  • 3 tablespoons olive oil
  • 1 (1.5oz) package fajita seasoning (or use homemade recipe in notes below)
  • 1 ½ pounds chicken breast cut into ½ inch strips
  • 4 large bell peppers sliced (any color works – green or red or orange or yellow – I used a mix)
  • 2 small onions cut into thin wedges (red or yellow or a mix)
  • 2 cloves garlic finely minced
  • 2 tablespoons fresh lime juice or to taste
  • 2 tablespoons chopped fresh cilantro or to taste
  • flour tortillas for serving

  • salsa extra lime)

Instructions

  1. Combine the chicken, veggies, and seasoning in a large resealable bag, then tightly close and shake thoroughly. Refrigerate the mixture for half an hour to marinate.
  2. Preheat your oven to 400F 200C and spread the marinated mixture evenly on a rimmed baking sheet. Bake for 15 to 20 minutes until the chicken is thoroughly cooked and the vegetables have softened, stirring once midway.
  3. If you like, place the pan under the broiler for 2 to 3 minutes to develop charred edges.
  4. Once done, mix in the lime juice and chopped cilantro. Serve the chicken and veggies warm in tortillas topped with your preferred toppings.
