2 pounds large shrimp
(21-24 count) peeled and deveined
1 tablespoon Old Bay seasoning
1 tablespoon salt for cooking water
2/3 cup mayonnaise
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 tablespoon butter plus more to grease the pan
1/2 cup panko bread crumbs
4 ounces shredded mozzarella cheese
4 ounces shredded medium cheddar cheese
Preheat oven to 350°F.
Boil shrimp in salted water with Old Bay seasoning for 2 minutes then drain.
In a bowl combine mayonnaise garlic powder black pepper and cooked shrimp.
Grease a baking dish with butter and transfer shrimp mixture.
Sprinkle mozzarella cheddar and panko bread crumbs over the top.
Bake for 25 minutes or until golden and bubbly.
Notes
For a spicier kick add a pinch of cayenne pepper
Use fresh shrimp for best flavor
Let the casserole rest for 5 minutes before serving
