  • 1 large spaghetti squash (about 34 pounds)
  • 4 tablespoons unsalted butter divided
  • 1 medium yellow onion finely chopped
  • 2 cloves garlic minced
  • 4 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper plus more to taste
  • 1/4 teaspoon nutmeg
  • 1 cup grated Gruyere cheese divided
  • 1 cup grated sharp cheddar cheese divided
  • 1/2 cup grated Parmesan cheese divided
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F. Slice spaghetti squash in half lengthwise and scoop out seeds. Brush with 1 tablespoon butter, season with salt and pepper. Place cut side down on baking sheet and roast until tender, about 40 minutes.
  2. Meanwhile, melt 2 tablespoons butter in a pan over medium heat. Add onion and garlic, sauté until translucent.
  3. Stir in flour and cook for 1-2 minutes until bubbly. Slowly whisk in milk and cook until sauce thickens. Add salt pepper and nutmeg.
  4. Remove from heat and stir in half the Gruyere, sharp cheddar, and Parmesan cheeses until melted.
  5. Scrape spaghetti squash strands into a large bowl. Pour cheese sauce over squash and mix well.
  6. Butter a baking dish then transfer mixture in. Top with remaining cheeses and panko breadcrumbs. Dot with remaining butter.
  7. Bake at 375°F until golden and bubbly, about 30 minutes. Garnish with parsley if desired before serving.

Notes

  • For an extra crispy topping, broil for 2-3 minutes at the end, watching carefully to prevent burning
  • This dish reheats well and can be made ahead of time
