2 Boneless Skinless Chicken Breasts
1 cup Dill Pickle Juice
1 large Egg
1 cup Milk
1 cup All Purpose Flour
1 Tbsp Confectioner’s Sugar
1 tsp Paprika
2 tsp Cayenne Pepper
1 tsp Pepper
1 tsp Salt
Peanut Oil or Canola Oil for Frying
4 Hamburger Buns
16 Dill Pickles
4 Slices Pepper Jack Cheese
1 Tomato sliced
4 Pieces of Leaf Lettuce
Instructions
Cut each chicken breast into two pieces and remove any fat.
Place the chicken pieces into a bowl with dill pickle juice, cover, and chill for 30 to 60 minutes.
Drain the chicken and whisk egg and milk together, then coat the chicken with this mixture.
In a large bag, combine flour, sugar, paprika, cayenne, salt, and pepper and shake to mix.
Shake the chicken in the flour mixture until coated well, removing excess milk mixture first.
Heat oil in a large skillet or fryer over medium heat.
Fry the chicken in batches for about 3 to 5 minutes until golden and crispy, then drain on paper towels.
Place cheese on hot chicken to melt.
Assemble sandwiches with buns, chicken, pickles, tomato slices, and lettuce. Serve warm.
