2 4 ounce size boneless skinless Chicken Breast halves
2 tablespoons Olive Oil
1 teaspoon chopped Garlic
1/2 cup shredded Chihuahua White Cheese
2 slices American Cheese
Prepared Mashed Potatoes
2 tablespoons chopped Garlic
2 tablespoons chopped Parsley
2 ounces Olive Oil
1 teaspoon crushed Red Chilies
1/4 teaspoon freshly ground Black Pepper to taste
1/4 teaspoon Salt
1 Green Bell Pepper julienned
1 Red Bell Pepper julienned
1 Yellow Onion julienned
Instructions
Gently flatten the chicken breasts until they have a uniform thickness.
Mix together all the marinade ingredients thoroughly.
Place the chicken in the marinade and chill it in the refrigerator for between 2 and 4 hours.
Cut the peppers and onions into thin strips then cook them in olive oil until they soften.
Add salt and pepper to season the pepper and onion mix.
Cook the chicken breasts evenly in olive oil over medium heat until they turn golden brown on both sides.
Heat a cast iron skillet over medium heat until it is very hot.
Spoon mashed potatoes onto one side of the skillet.
Arrange the cheeses on the opposite side of the skillet and cover with the pepper and onion mixture.
Put the cooked chicken atop the pepper and onion medley, layered on the potatoes.
Sprinkle chopped parsley over everything.
Serve the dish straight from the skillet just like at T.G.I. Fridays.
