1 pound ground Italian sausage I recommend spicy
3 garlic cloves minced
1 medium white onion peeled and diced
1.5 pounds Yukon Gold potatoes diced
5 to 6 cups chicken stock
2 to 3 cups chopped fresh kale
1 cup heavy whipping cream
fine sea salt and freshly-ground black pepper
6 pieces bacon cooked and crumbled
Instructions
Brown the sausage in a large pot over medium-high heat, breaking it into pieces and then remove it with a slotted spoon, keeping only 1 tablespoon of the grease in the pot.
Sauté the onion in the reserved grease for 5 minutes then add the garlic and cook for another minute.
Stir in the potatoes, chicken stock, and cooked sausage then bring to a simmer.
Lower the heat and simmer until potatoes are tender, about 10 minutes.
Mix in the kale and cream, cooking for 5 more minutes.
Season to taste with salt and pepper and top with crumbled bacon before serving.
