  • 1 medium onion diced
  • 12 cups carrots diced
  • 1 cup celery diced optional
  • 1 Tbsp. minced garlic from a jar
  • 2 cans cream of chicken soup
  • 6 cups chicken broth
  • 1 Tbsp. chicken base optional
  • 1 ½2 pounds boneless skinless chicken breasts 2-3 breasts
  • ½ teaspoon seasoning salt
  • ¼ teaspoon pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon poultry seasoning
  • 4 Tbsp. butter ½ stick
  • 24 oz. frozen egg noodles or 10 ounces dried noodles

Instructions

  1. Place diced onions, carrots, celery if using, and garlic in the slow cooker.
  2. Pour in cream of chicken soup, chicken broth, and chicken base if desired, then add the chicken breasts along with seasoning salt, pepper, garlic powder, and poultry seasoning.
  3. Cook covered on HIGH for 4 to 5 hours or LOW for 6 to 8 hours.
  4. Remove the chicken, dice it into bite-sized pieces, and return it to the slow cooker.
  5. Add the noodles, stir well, cover again, and cook on HIGH for 45 minutes until noodles are tender.
  6. Serve as a hearty soup or spoon over mashed potatoes with a biscuit on the side.
