One Pan Marry Me Chicken Gnocchi is a creamy chicken gnocchi dish perfect for a family dinner or easy weeknight dinner. This one skillet chicken dinner offers comforting flavors and quick prep for a satisfying meal.

  • 1/2 lb (250g) skinless boneless free-range chicken thighs diced
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 4 garlic cloves crushed
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried thyme
  • 1/2 cup sundried tomatoes chopped
  • 1/2 cup sour cream or use heavy or double cream or crème fraîche or mascarpone or cream cheese
  • 1 cup chicken stock
  • 1 teaspoon fish sauce
  • 1 lb (500g) gnocchi
  • 2 big handfuls of spinach leaves
  • 1/2 cup grated parmesan cheese plus more to serve
  • 1 tablespoon lemon juice
  • A handful of basil leaves
  • Black pepper

Instructions

  1. Season the diced chicken thighs with half a teaspoon of salt. Heat a skillet over medium-high and add olive oil. Place the chicken evenly in the pan and let it cook undisturbed for about 4 minutes until golden. Flip and cook the other side for a couple more minutes. Remove the chicken and cover it with foil.
  2. Keep the chicken juices in the pan, removing any burnt bits. Add crushed garlic, red pepper flakes, dried thyme, and the remaining half teaspoon salt. Stir for a minute before adding sun-dried tomatoes. Cook for another minute to blend flavors. Pour in sour cream, chicken stock, and fish sauce, mixing into a smooth sauce. Add the gnocchi, stir to coat, cover, and cook for about 5 minutes until tender.
  3. Uncover, stir the gnocchi, then return the chicken to the pan along with spinach. Mix well until the spinach wilts. Sprinkle grated parmesan cheese and stir again. Lower the heat and simmer for a few minutes until the sauce thickens. Finish by stirring in lemon juice and half the basil leaves. Serve garnished with the remaining parmesan and basil.

  • STORAGE INSTRUCTIONS: The gnocchi is best served right away but leftovers can be refrigerated for 3 days
  • Reheat gently in a pan or microwave with a splash of water to loosen the sauce
