One Pan Marry Me Chicken Pasta is an easy dinner that brings creamy chicken pasta to your weeknight meals. This one skillet chicken pasta is perfect for family dinners, delivering rich flavor with tender chicken and sundried tomatoes.

  • 2 tablespoon olive oil divided
  • 1 lb lean ground chicken
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 cloves garlic pressed
  • ½ yellow onion diced about 1 cup
  • ½ cup chopped sundried tomatoes
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes
  • ½ teaspoon paprika
  • 3 large handfuls fresh spinach
  • 2.5 cups low sodium chicken broth
  • 10 oz small pasta small pasta shells about 1 + ¼ cup dry pasta
  • ½ cup Parmesan cheese grated
  • ½ cup 5% plain Greek yogurt see notes
  • Fresh basil for topping

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat, then add ground chicken and cook, breaking it up with a spatula, until it is fully cooked and no longer pink. Season with salt and pepper.
  2. Add the remaining tablespoon of olive oil, then stir in garlic, onion, sundried tomatoes, Italian seasoning, red pepper flakes, and paprika, cooking until the garlic is fragrant and onions are translucent.
  3. Mix in fresh spinach and cook until it wilts.
  4. Pour in chicken broth and add the dry pasta, bringing the mixture to a boil. Reduce heat to a simmer, cover, and cook the pasta for 15 to 20 minutes, stirring occasionally to prevent sticking.
  5. Remove from heat and stir in Parmesan cheese and Greek yogurt. Serve garnished with fresh basil.
