Enjoy a comforting Panera Autumn Squash Soup that’s creamy and full of warm spices. Perfect for an easy dinner or family dinner, this copycat squash soup is a cozy weeknight dinner with rich flavors of butternut squash and apple.

  • 1 tablespoon extra virgin olive oil
  • 1 small yellow onion diced about ¾ cup
  • 2 pounds chopped butternut squash about 6 heaping cups
  • 3 small carrots chopped about 1 cup
  • 34 cups vegetable broth
  • 2 cups apple cider or apple juice do NOT use apple cider vinegar
  • ½ teaspoon curry powder
  • ¼ teaspoon cinnamon
  • dash of nutmeg
  • ½ cup pumpkin puree
  • 2 tablespoons butter
  • 2 ounces low-fat neufchatel cream cheese
  • 1 tablespoon brown sugar more to taste
  • salt to taste
  • heavy cream optional

Instructions

  1. Warm the olive oil in a large pot over medium-high heat until shimmering.
  2. Add the diced onion and cook it, stirring often, until it becomes soft and translucent.
  3. Stir in the butternut squash, carrots, vegetable broth, apple cider, and spices.
  4. Bring the mixture to a boil, then lower the heat to let it simmer for 10 to 15 minutes until the vegetables are tender.
  5. Remove the pot from the heat and blend in the pumpkin puree, butter, cream cheese, and brown sugar until the soup is completely smooth.
  6. Season with salt and add more brown sugar or honey if you want it sweeter.
  7. If desired, mix in some heavy cream for extra creaminess or add more vegetable broth to adjust the soup’s consistency.
  8. Warm the soup gently over low heat if needed before serving.

Notes

  • If you want it to be just like Panera squash soup – add more brown sugar and/or honey to taste
  • Adding more cream will also give it a richer flavor
  • This soup calls for two cups of apple cider, NOT APPLE CIDER VINEGAR
  • If you can’t find apple cider use a natural 100% juice apple juice
  • Use low sodium or no salt added vegetable broth to reduce sodium
